Happy Hearts Day Menu

 Valentines day is just around the corner folks! 

I really get into celebrating my relationship with The Sportsman. My favorite tradition is to leave little notes and special presents for him for the first 14 days of February. I have done this since we met. It's lots of fun buying his favorite candy and other little things and thinking of extra special ways to show him how much I love him. I'm already collecting my stash of gifts for him.

Try it with your hunny, or even your kids!

We usually don't celebrate Valentines day ON Valentines day, mostly because if your going out it is sure to be crowded. So this year I came up with this special little meal I can make for my hunnies at home on the big day. It's kid friendly while tasting gourmet. Oh and there is lots of red.

Hearts Day Menu

Bow-Tie Pasta with Creamy Chicken Tomato Sauce
Twisted Garlic Bread-sticks
Happy Hearts Pie
Bottle of Wine (Grape Juice for the kiddos)
 

Bow-Tie Pasta with Creamy Chicken Tomato Sauce

Ingredients:
1 box bow-tie pasta
5 chicken tenderloins
1 can rotel
1 cup tomato sauce
1 cup cream
1/2 cup shredded parm
1 T minced garlic
handful of diced onions
olive oil
Italian seasoning

Cook pasta according to box directions. Steam chicken tenderloins until cooked through and set aside. Saute onions and garlic in olive oil until caramelized. Add can of rotel, Italian seasoning and tomato sauce and bring to boil. Reduce heat and add cream and shredded parm. Add chicken back into sauce and cook until it thickens, approx 3 minutes. Serve over pasta and garnish with grated parm.


Happy Hearts Day Pie

Ingredients:
2 balls of basic pie dough
2 cans cherry pie filling
1 T lemon juice
1 egg

Roll out one ball of pie dough and place in pie plate. Shape edges. In large bowl combine lemon juice with pie filling (it adds that extra zest). Pour filling into pie plate. Roll out second ball of dough and cut with a heart shaped cookie cutter and arrange the hearts on the top of filling. Whisk your egg in small bowl and paint over all the exposed dough edges. Bake at 350 for 40 minutes or until pie crust browns. You may want to cover your pie outer edge with tin foil to avoid the edges from getting to crispy.



 
Sportsman-in-Training loves cooking so I let him jump in and help with making the hearts. He loved it!
