So I have been reminded repeatedly that the Super Bowl is just around the corner. It's the reason I am blogging when I should be doing my workout video...the tv area has been sanctioned an official football watching zone.
I can kinda get into this particular sporting event though, mostly because it is all about the food.
You know it is.
It is impossible to miss the mini football field made out of Coke and Doritos at the entrance of my local grocery store. Or the bazillion football themed food commercials on the tube right now.
But that's ok, because I enjoy food. I really like making food. Especially appetizers.
I tried out this new recipe, and you guys... it's awesome.
The name kinda scared The Sportsman a little, he doesn't like to cross his cuisine's. When I said we were having Wonton Tacos for our after church snack today, he wasn't so sure.
But both of my guys gave this one a thumbs up and I am pretty sure these made it on to the Super Bowl appetizer list. These are made with chicken, but I can't wait to "beef" them up with some taco stuffing or maybe even pulled pork with some of Loni's Secret Sauce for dipping. The best part? They only took five minutes to bake. If you make the filling ahead of time, these are perfect for that time crunch... like when you get home from church and have two starving guys on your hands.

Wonton Tacos
Ingredients:
7 Chicken Tenders
1 Can Herdez Green Salsa Verde (found this in the mexican aisle for .50!? My new favorite.)
2 T Plain Greek Yogurt
1/2 t Chili Powder
1/2 t Garlic Powder
1/4 Cup Chopped Onion
1/4 Cup Mexican Style Shredded Cheese
1 Package Small Wonton Wrappers (I bought a 12 oz bag and only used half for this recipe, it made about 24. I found these in the produce department of all places...)
*Optional* 4 T Texas Pete wing sauce
Preheat oven to 400 degrees. Steam chicken until cooked through and shred apart with a fork. In large bowl, mix together salsa verde, yogurt, chili, garlic, onion and cheese. I made half with texas pete and half without... we liked both flavors equally so it's up to you if like that extra flavor or not. Mix in shredded chicken. Drop by tablespoon onto the center of each wonton wrapper and press together corners diagonally. It helps to wet your fingers to adhere the dough. Bake in oven for 4-5 minutes. Watch closely, they don't take long! Let them cool on the pan for a few minutes to allow them to set up.
The dip pictured is 1/2 cup plain greek yogurt mixed with 1/4 cup Texas Pete wing sauce with green onion for garnish.
